Creamy Cheesy Keto Almond Flour Pancakes

Keto pancakes are one of the best breakfast choices when you are on a low-carb diet. They are fluffy, light, gluten-free & sugar-free. These almond cream cheese pancakes are delicious and a go-to breakfast choice for most keto dieters.

In my family, not everyone follows the keto diet but still, my husband and my kids love these keto pancakes. I make these pancakes for weekends and they all love it. Some keto pancakes contain only eggs and cream cheese but I have avoided it since my kids don’t like the taste of egg.

WHY DID YOU CHOOSE ALMOND FLOUR?

One important reason is almond flour is nutrient-dense and a great alternative to wheat flour. Also, it provides the texture of real pancakes. 

Almond flour makes the pancakes fluffy and light, It keeps your energy level high and will not send your blood sugar high.

These almond flour pancakes are not only delicious but also easy to make it.

HOW TO MAKE THESE ALMOND FLOUR KETO PANCAKES?

  • Mix all the ingredients in a blender or a balloon whisk.
  • On a non-stick pan on medium heat fry the pancakes in melted butter or a coconut oil
  • Flip the pancakes as soon as you start noticing the bubble at the center. I make 2 pancakes per pan.
  • Serve hot.

WHAT ARE THE TOPPING OPTIONS FOR KETO PANCAKES?

  • Serve with berries, whipped cream or yogurt, or with sour cream.
  • For low carb dieters, sugar-free maple syrup or lakanto is the best option
  • Drizzle the top of pancakes with 2 ingredients of sugar-free caramel sauce.
  • Add a touch of sugar-free blueberry jam
  • A spoon of delicious sugar-free strawberry jam or raspberry jam makes these pancakes more delicious
  • If you prefer savory then replace the sweeteners with chives, chopped spinach, or cheese.
  • For those who need sweet and salty top it with bacon.

HOW TO STORE PANCAKES?

Freeze the leftovers pancakes by stacking them by placing a piece of parchment paper between each pancake. It also avoids pancakes from sticking together. 

HOW TO FURTHER FLUFFY THE KETO ALMOND FLOUR PANCAKES?

This recipe is perfect to get perfect light pancakes. but, if you want to fluff it further then you can half the teaspoon of baking powder.  Some also prefer to add xantham gum, but I prefer not to add them since it increases the size of the pancakes and I prefer shorter ones.

HOW TO MAKE PANCAKES IN THE OVEN?

Use a whoopie pie pan or a large muffin pan and fill the batter into perfect mini-circles and bake the pancakes at 180°C or 356 F.
You can also use a leftover batter to make some waffles. They are delicious and my kids love it too.

USEFUL TIPS:

  • It is advised to keep the size of the pancakes to 10-12 cm in diameter. Almond flour pancakes are usually fragile and they often get fall apart due to the absence of gluten. 
  • Frying the pancakes on medium heat always brings the best result. It prevents the pancakes from getting burnt. You can use butter to fry or you can also use coconut or avocado oil.
  • Use a good quality non-stick pan. It becomes easy to flip the pancakes without sticking. Also, use a spatula to help you in lifting the pancakes.
  • Sprinkle cinnamon to give the recipe a warm flavor. 1 teaspoon of vanilla extract can also work great.

  • 1 teaspoon granulated sweetener
  • Butter
