Chicken breasts: 0.5lb chicken breasts. You can also use rotisserie chicken but make sure to remove the skin as the texture will feel rubbery in the casserole.
Salt and black pepper: I use kosher salt. If you are using fine salt make sure its quantity is less.
Sause: For the sauce, I use mayonnaise made with avocado oil, Dijon mustard, sour cream, shredded cheddar, garlic, and spices.
Topping options: I have used scallions and bacon pieces for toppings.

- Bake the chicken first and then cube it. Mix it with a creamy homemade sauce.
- Sprinkle cheese on top of the mixture and then shift the mixture into a baking dish. Bake the mixture until hot.

Creamy Chicken Casserole
This keto chicken casserole is a creamy dish. If you want it more creamy then add 1/3 cup of sour cream and mayonnaise each to make it extra creamy.
Keto Chicken Bacon Casserole Dish
Ingredients
- Chicken:
- 0.5 lb boneless skinless chicken breasts
- Avocado oil spray
- ½ tsp kosher salt
- ¼ tsp black pepper
- Sauce:
- ¼ cup avocado oil mayonnaise 1/3 cup for a creamier casserole
- ¼ cup sour cream 1/3 cup for a creamier casserole
- 1 tbsp Dijon mustard
- 1 tbsp minced garlic
- ½ tsp kosher salt
- ¼ tsp black pepper
- ½ tsp dried thyme
- ½ tsp paprika
- ¼ tsp cayenne pepper
- 1 cup shredded sharp cheddar divided
- Topping:
- ¼ cup sliced scallions green parts
- ¼ cup bacon bits room temperature
Instructions
- Preheat the oven to 450°F.
Arrange the chicken breasts on a baking dish lined with parchment paper. Spray the pan with oil and sprinkle some salt and pepper. Bake the chicken for 20 minutes or until cooked.
In the meantime, grease a 2-quart casserole dish
In a large mixing bowl add mayonnaise, sour cream, Dijon mustard, minced garlic, salt, pepper, dried thyme, paprika, cayenne, and ½ cup of the shredded cheddar and mix well until combined thoroughly.
Remove the chicken from the oven after it is cooked thoroughly. Allow the chicken to cool down a bit and cut it into small cubes. Add the chicken cubes to the mixing bowl. Mix it with the mixture until well combined.
Transfer the mixture to the already prepared casserole dish. Sprinkle a half cup of shredded cheddar cheese. Bake until cheese is melted for 5 to 10 minutes.
Sprinkle sliced scallions and bacon pieces on the casserole. Serve now.
