How to Make a Keto Chicken Burrito Wrap
This Keto Chicken Burrito Wrap starts with a keto tortilla made with almond flour, coconut flour, psyllium husk, salt, baking powder, and water.
For maximum convenience, I use soft and flexible store-bought keto tortillas. You can also make your own keto tortillas from scratch if you prefer. See the notes for a link to a homemade keto tortilla recipe.
Warm the tortilla in the microwave for 15 to 20 seconds until soft and pliable. Then spread mayonnaise over the tortilla, leaving a 1-inch border around the edges. This will add creaminess and help the wrap stick together.
Top the mayonnaise with shredded lettuce, baby spinach leaves, julienned carrot, sliced cucumber, and shredded rotisserie chicken. You can use any leftover cooked chicken or meat of your choice. Or use tofu for a vegan option.
