Sure, you can use chicken thighs instead of chicken breasts. But I prefer to use large chicken breasts since it easily holds the sauce, easy to transfer to the casserole dish to melt the cheese on top.
What Are The Other Cheese Option?
My first preference will be swiss cheese if you want to get a perfect flavor in the french onion soup. But if you do not like swiss cheese, you can use the classic Gruyere cheese instead. Also, note that Gruyere cheese is not sold in slices, and they are a little expensive. You can also use provolone or mozzarella cheese.
How To Make Low Carb French Onion Chicken In Slow Cooker?
- Spray the crockpot with non-stick spray and arrange the chicken breast on the bottom of the crockpot.
- Place the sliced onions on top of the chicken and spray with Lipton onion soup and dip mix. Finally, pour the French onion soup on top and place the lid on the crockpot.
- Cook on High for 4 hours or on Low for 8 hours.
- Preheat the broiler and grease the casserole dish with nonstick spray.
- Once cooked, remove the chicken breasts and place on an oven-safe casserole dish. Scoop the leftover onions and place them on top of the chicken.
- Top each chicken breast with cheese. Broil until melted for about 2 minutes. Serve.

1 small yellow onion, thinly sliced
1 oz envelope Lipton Onion Soup & Dip Mix
10.5 oz can condensed french onion soup
4-6 thick slices gruyere or Swiss cheese
Directions
- Spray the crockpot with non-stick spray and arrange the chicken breast on the bottom of the crockpot.
