Ingredients

  • 8 tablespoon of unsalted butter
  • 1/3 cup of swerve brown sugar substitute
  • 1/3 cup of heavy whipping cream
  • 1 cup of pecan halves
  • 1/3-1/2 cup unsweetened coconut flakes
  • 1/8 cup of keto-friendly chocolate chips
  • Parchment paper

Instructions

  1. Place the saucepan on the stove over medium heat and add butter.
  2. Wait for the butter to melt. Once melted, add swerve ( brown sugar substitute ) and mix it well till completely dissolved.
  3. Whip in with heavy whipping cream until well mixed.
  4. Cook and stir the whole mixture for 10 minutes until it froth and thickens.
  5. After 10 minutes, remove the mixture from the heat and add pecan halves and coconut flakes. Mix them well and allow them to cool for a few minutes.

  6. Atop the parchment paper, add the cookie mixture using a large spoon.

  7. Sprinkle some keto-friendly chocolate chips atop each cookie and slightly press them down.

  8. Place the cookies inside the fridge to harden for an hour.

  9. Serve or store it in an airtight container inside the fridge.
