This creamy cheesy chicken broccoli casserole a delicious keto comfort meal. It is rich in flavor, cheesy, and makes a perfect quick meal for those busy weeknights. It is one of the satisfying low carb meal you could ever have, it contains only 4g net carbs per serve.

It is a one-pot meal which is low in carb and you can make it ahead and cook it the next day or whenever as needed. This recipe makes 8 serves. 

Leftover chicken and broccoli casserole can be stored in the fridge for up to 4 days. 

How To Make Keto Cheesy Chicken Broccoli Casserole

  • Preheat the oven to 200°C or 390°F
  • Pour the water in a saucepan and place it over high heat and boil the broccoli until it is firm. Once done, drain the broccoli and mix it with the shredded chicken in a large mixing bowl.
  • In a small saucepan add cream cheese, cream, almond milk, mustard, pepper and, salt and place it on low heat. Stir until the sauce is smooth.
  • Pour the warm sauce into the chicken and broccoli mixture. Add basil to the mixture and combine well.
  • Pour the mixture into a casserole dish. Top it with shredded cheese.
  • Bake for 30 minutes or until the cheese turns brown.
  • Serve hot.

  1. On Saute, add 1 tsp oil, 1 medium onion & 3 garlic cloves. Mix together.
  2. Add 1 large chicken breast, 3 cups chicken broth, and 10 oz Green Enchilada Sauce. Place the lid, press 'Soup', and set the timer for 10 minutes
  3. After 10 minutes, open the lid. Take the chicken breast out and shred it. 
  4. Press Saute again. Add 4 OZ Cream Cheese and stir well until it is mixed.
  5. Next add 1/2 cup of heavy cream, 1 cup of Jack Cheese, Shredded, cilantro, and finally shredded chicken. Mix well.
  6. Sprinkle salt and pepper for taste.
  7. Add toppings of your choice and serve.
