It is a one-pot meal which is low in carb and you can make it ahead and cook it the next day or whenever as needed. This recipe makes 8 serves.
Leftover chicken and broccoli casserole can be stored in the fridge for up to 4 days.
How To Make Keto Cheesy Chicken Broccoli Casserole
- Preheat the oven to 200°C or 390°F
- Pour the water in a saucepan and place it over high heat and boil the broccoli until it is firm. Once done, drain the broccoli and mix it with the shredded chicken in a large mixing bowl.
- In a small saucepan add cream cheese, cream, almond milk, mustard, pepper and, salt and place it on low heat. Stir until the sauce is smooth.
- Pour the warm sauce into the chicken and broccoli mixture. Add basil to the mixture and combine well.
- Pour the mixture into a casserole dish. Top it with shredded cheese.
- Bake for 30 minutes or until the cheese turns brown.
- Serve hot.

Ingredients
- 1 Tsp Oil
- 1 Medium onion
- 3 Cloves garlic
- 1 large chicken breast
- 3 Cups Stock
- 10 oz Enchilada sauce green
- 4 oz Cream cheese
- 1/2 cup Heavy cream
- 1 cup Jack cheese
- Cilantro
- Salt
- Pepper
Instructions
- On Saute, add 1 tsp oil, 1 medium onion & 3 garlic cloves. Mix together.
- Add 1 large chicken breast, 3 cups chicken broth, and 10 oz Green Enchilada Sauce. Place the lid, press 'Soup', and set the timer for 10 minutes
- After 10 minutes, open the lid. Take the chicken breast out and shred it.
- Press Saute again. Add 4 OZ Cream Cheese and stir well until it is mixed.
- Next add 1/2 cup of heavy cream, 1 cup of Jack Cheese, Shredded, cilantro, and finally shredded chicken. Mix well.
- Sprinkle salt and pepper for taste.
- Add toppings of your choice and serve.
